Baileys Chocolate Frosted Cheesecake Bars

Here’s a nice change from an ordinary cheesecake bar. Not only are these loaded with chocolate chips, they have a wonderful thick ganache frosting on top. A winner for sure with anyone who loves cheesecake and chocolate. Try these Bailys Chocolate Frosted Cheesecake Bars and enjoy every last bite!

I enjoy enjoy all the holidays with family and friends and really enjoy hosting get togethers and parties.

St. Patrick’s Day is one of those holidays that I really enjoy to host.

It’s a favorite food holiday for sure. 

Every year I try and come up with a few dessert recipes for the whole family to enjoy and these Baileys Cheesecake Bars are at the top of the list. I mean, who doesn’t want to enjoy at adult dessert recipe spiked with Bailey’s Irish Cream.

My husband and I along with our friends really enjoyed these cheesecake bars a lot. I recently made them when invited to a friends’ house.

I brought them along to test the recipe out.

Needless to say, these bars were a huge hit.

The Baileys is subtle in the cheesecake and the chocolate ganache.

Of course if you want a more bolder taste of Baileys, add in a little more.

But, I really think the amount is perfect.

 

Baking for the kiddos..

No worries,  if you are making these with kids around. Just leave off the Baileys entirely. These cheesecake bars are so delicious on their own.

The Baileys adds a nice depth of flavor to the rich, chocolaty ganache that tops these already decadent cheesecake brownies and the cheesecake itself is so rich and decadent tasting already, the Baileys adds the most wonderful layer of deliciousness.

A little goes a long way when it comes to baking and cooking with Baileys.

Baileys Chocolate Frosted Cheesecake Bars

Recipe yields: 12 to 16 bars, depending how small or large you cut them

 

What you’ll need to make a batch of Baileys chocolate frosted cheesecake bars…

 

Ingredients:

For the crust:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted and cooled to room temperature
  • 1/8 teaspoon sea or kosher salt
  • 2 tablespoons green food coloring, this is optional

For the cheesecake filling:

  • 3 – 8 ounce packages cream cheese, softened
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • a small pinch fine sea or kosher salt
  • 1 to 2 tablespoons Baileys Irish Cream Liquor
  • 1 cup semisweet chocolate chips or same amount of mint chocolate chips. (Mix the two together if you want) Found next to the regular chocolate chips at most grocery stores, Target, and Walmart. Can be found on Amazon here.

Baileys chocolate ganache frosting:

  • 1 cup Semi Sweet or bittersweet chocolate chips
  • 1 tablespoon or more Bailey’s Irish Cream Liquor 
  • ½ cup heavy whipping cream
  • small pinch fine sea or kosher salt

 

The crust magically turns the most beautiful shade of green..

 

 

How are these chocolate frosted Baileys cheesecake bars made…

Directions:

  1. Preheat oven to 350 degrees. Line a 9 x 13 baking pan with parchment paper. Set aside.
  2. In a medium mixing bowl, combine graham cracker crumbs, butter and green food coloring. Stir well to combine. Press into the bottom of prepared baking pan. Set aside.
  3. Using a standing mixer, beat together softened cream cheese and sugar. Add eggs, one a time and mix well.
  4. Add in vanilla extract with a rubber spatula.
  5. Fold in ¾ cup of the mint chocolate chips.
  6. Pour cream cheese mixture on top of crust. Smooth out with the rubber spatula to even out.
  7. Sprinkle remaining ¼ cup chocolate chips over the cheesecake mixture
  8. Bake in oven for approximately 38 to 42 minutes or until center is set. Check at 38 minutes.
  9. Cool for 15 minutes on a wire rack then transfer to the refrigerator to cool completely. This could be about 3 hours.

Making the chocolate ganache:

  1. Using a small pot, heat heavy whipping cream until lightly simmering.
  2. Place the chocolate chips and Bailey’s into a heat proof bowl and pour the hot heavy whipping cream over the chocolate chips.
  3. Allow to sit for 1 minute before mixing until smooth. Mix fast until the ganache is completely combined and looks shiny.
  4. Pour the chocolate ganache over the cooled cheesecake bars. Smooth out. The ganache should set up fast since the bars are cold. Once set, cut into bars. Enjoy!
