My son Josh and I just made these tonight. They came out amazing.

My husband who is not a mint fan, couldn’t believe how much he enjoyed not one but two big squares of these gems.

The cheesecake swirl gives these boxed brownies a homemade taste and it’s defiantly a recipe I will be making often.

They also look so bright with the green swirl.

The different chips really add a great texture and minty, chocolatey bite.

Mint Chip Cheesecake Brownies

Yields: 12 to 15 brownies

What you’ll need to make mint chip cheesecake brownies…

Here are the ingredients :

Brownie Ingredients:

  •  I box chocolate brownies, 20 ounce box
  • 1/2 cup vegetable oil such as canola or avocado
  • 1/4 cup cold water
  • 2 large or extra large eggs
  • 1 tsp vanilla extract

Mint Chip Cheesecake:

  • 8 ounce block cream cheese softened to room temperature
  • 1/4 cup granulated sugar
  • 1 egg yolk from a large or extra large egg
  • 1/4 to 1/2 tsp mint or peppermint extract, we used peppermint
  • 4-6 drops green food coloring
  • 1/2 cup mini chocolate chips
  • 3/4 cup mixed Hershey mint chocolate baking chips mix and Andes baking chips, or you can use just one of these
  • 1/4 cup mini chocolate chips for sprinkling on top of batter

 

 

 

 

How to make this recipe…

Here’s the easy recipe:

Preheat oven to 350 degrees.
Line an 9×13 inch baking pan with parchment paper. (leave an overhang on all sides.)
Set aside.

Brownies:

  1. Beat together the brownie mix, eggs, oil, vanilla extract, and water.
  2. Continue to mix until smooth.
  3. Take out 1⁄3 cup of the batter. Set aside
  4. Pour remaining batter into prepared pan.

Cheesecake Swirl:

  1. Beat softened cream cheese, sugar, egg yolk, mint extract, and food coloring in a medium bowl with an electric mixer until the mixture is completely smooth. (about 1 minute).
  2. Add the chip mixture. Stir in by hand.
  3. Dollop large spoonful’s of cream cheese mixture on top of the prepared brownie batter. Next, add dollops of remaining brownie batter to the top of the cheesecake dollops.
  4. Using a knife create a swirl effect to mix up the cream cheese mixture and brownie dollops.
  5. Sprinkle additional mini chocolate chips on top.
  6. Bake brownies for 35-40 minutes or until a toothpick comes out with moist crumbs. Try not to over bake.
  7. Remove from the oven and let cool in pan on wire rack until cooled.
  8. Slice into squares, plate these gems up and take a big bite!
