Apple Pie Crumb Bars

 This recipe is the best of an apple pie and crumb cake all in one. As a result, these apple pie crumb bars come out so delicious. 

 

 

These apple pie bars are so easy to make and, always such a big hit with family and friends.

When visiting family in New England, these are requested every year when we go up in during one of the school vacations.

It’s not just the kids that love these but, the adults too. My sister says they are the best to have with her tea at night. I totally agree.

Most of the time I bake these during the beginning of the fall season. Right around the time school starts. Mid September. 

My husband and kids enjoy going apple picking each year in the months of September and October.

So, there’s always a good selection to choose from at the orchard we visit around Long Island. 

For this recipe I used one specific apple, the Gala apple. I did try others but this one worked the best for taste and texture for these bars. 

If you scroll around the blog, you’ll see lots of different kinds of apple recipes from years ago and more recent ones. There are different apples used for each recipes, sometimes a mixture of apples. Like in this
Rustic Apple Crumble Pie, I used three different kinds of apples for the best taste and oh boy, that pie comes out so delectable each and every time we bake one. 

Now, this recipe has become I guess you could say a staple around my house. My husband and kids love these so much I make them year round. 

Great thing about apples are they’re in season year round. So, we can pick some up at our local farmers market or grocery store and bake a batch of these bars anytime of year. 

You can use any of your favorite apples. I found that the Gala apples work best for these bars but, Granny Smith also work too. They are just a little tart and my family likes these bars on the sweeter side. 

You could mix  two different kinds as well. They will come out fantastic either way.

Apple Pie Crumb Bars

Yields: 12 large bars

What’s in these delicious looking bars?

Ingredients:

crust:

  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea or kosher salt
  • 1 cup all purpose flour

filling:

  • 2 large Gala apples (peeled and thinly sliced to 1/4 inch thickness)
  • 2 tbsp all purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp cold water, apple juice, or apple cider
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp fine sea or kosher salt

crumb topping:

  • 1/2 cup old-fashioned oats
  • 1/3 cup packed light brown sugar
  • 1/4 tsp cinnamon
  • 1/4 cup all purpose flour
  • 1/8 tsp fine sea or kosher salt
  • 1/4 cup cold unsalted butter, kept cold and cubed

 

 

 

Perfection! 

How are these apple pie crumb  bars made?

Directions:

  1. Preheat oven to 300 degrees. Line an 8 in square baking dish with parchment paper. Set aside.
  2. Crust directions: In a medium bowl stir the melted butter, sugar, vanilla, and salt together. Slowly add the flour to the mixture stirring to blend all the ingredients together.
  3. Using your hands press the mixture into the baking pan. Bake for 13 to 15 minutes. Should be lightly brown. Let cool on wire rack. 
  4. Apple Filling directions: In a large mixing bowl add the sliced apples, flour, sugar, water or apple juice, cinnamon, and nutmeg. Continue working with the apples until they are well coated. Set aside
  5. . Crumb directions: In a large mixing bowl, combine the oats, brown sugar, cinnamon, and flour. Whisk all ingredients together until they are mixed well. Slowly begin to work the butter into the dry ingredients. Using your hands, work with the mixture until it looks like crumbs. Set aside.
  6. Now, increase the temperature of the oven to 350 degrees. Lay the  apple mixture on the baked crust. Put the apple slices close together pressing them down into the crust. Sprinkle the crumb topping over the apples. Gently press into the apples.  Return to the oven and bake at 350 degrees for 30-35 minutes. Crumb topping should be a golden brown. Set aside to cool on a wire rack for 20 minutes at room temperature. Transfer to the refrigerator for 2 hours to chill. Remove the bars from the baking pan and cut into bars.
