Indoor S’Mores

Everyone loves S’mores. Now, we can have them anytime, any climate, right indoors! Try this yummy and easy version. You’re going to love them. Enjoy!

 

Living on Long Island, we can’t always use our BBQ year round. Once the weather starts to warm up in the spring, we start barbecuing a few times a week. Over this past winter, we were finishing dinner and my son asked if we could light the BBQ to just make some S’mores. My husband told him he’d have to wait just a little while longer. That got me to thinking, I should be able to come up with a recipe to make these yummy treats anytime we wanted without having to go outside. So, I grabbed some graham crackers and marshmallow fluff. No toasting marshmallows indoors. Hmm, now for the chocolate. I had made a simple chocolate sauce for another recipe a while back and knew it would be great for a homemade, indoor S’more. It was. We didn’t even need to turn on the oven or use the microwave.  These are so gooey and delicious. The whole family loved them and we now make these every Sunday night after dinner. Even when the BBQ is up and running, I think these are still going to be our go-to S’mores from now on. Try this simple recipe soon. It’s sure to be a hit with your family too.

Indoor S’Mores

Yields 6

 

Ingredients:

  • 6 whole graham crackers — Nabisco or store brand works
  • about 1/3 cup semisweet chocolate chips
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp powdered sugar
  • 6 slightly heaping tbsp marshmallow fluff
  • 1/4 cup  sweetened condensed milk — save the rest in the fridge for another recipe
  • 1/2 tsp vanilla extract
  • pinch fine sea or kosher salt

Directions:

  1. Have your crackers split in half to make 12 crackers. Set aside.
  2. In a small saucepan, heat the condensed milk along with the chips on low heat. Stir until smooth. I use a rubber spatula or a rubber whisk.
  3. Add the powdered sugar and cocoa powder. Stir well until smooth again. Remove from heat.
  4. Stir in the vanilla extract. Stir again.
  5. Spread a tablespoon or two of chocolate on six of the graham crackers squares; spread 1 tablespoon of the marshmallow cream on the other 6 squares.
  6. Sandwich them together and you are ready for a wonderful treat. Serve warm if possible and Enjoy!!
