  • 2 large cans of tuna
  • 15 oz. steamed broccoli – chopped
  • 1/2 medium yellow onion – chopped
  • 2 teaspoons minced garlic
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese – grated and divided
  • 1/8 to 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup pork rind crumbs – crushed

Substitutions and Variations

  • For classic tuna noodle casserole, add keto noodles.
  • You can use white onion for a bit more bite.
  • Add red pepper flakes for a spicy kick.

  8. Mix the crushed pork rinds with the rest of the parmesan cheese and sprinkle over the casserole.
  9. Bake for 20 to 25 minutes until lightly browned.
  10. Cool for 5 minutes and enjoy.

Storage

Refrigerate leftovers loosely covered in the refrigerator for up to a day.

To reheat the casserole, microwave individual portions at 1-minute intervals until heated through.
