Keto Tuna Broccoli Casserole

Ingredients

  • 2 large cans of tuna
  • 15 ounces  steamed broccoli – chopped
  • 1/2 medium yellow onion – chopped
  • 2 tsp minced garlic
  • 1/2 cup  heavy cream
  • 1/2 cup  parmesan cheese – grated and divided
  • 1/8-1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/3 cup pork rind crumbs – crushed

Instructions

  1. Preheat the oven to 350 degrees, and butter or lightly spray a 9×9 baking dish with nonstick spray.

    Sauté the onions in butter in a medium pot until softened, add the garlic and sauté for 20 to 30 seconds until fragrant. Pour in the heavy cream and simmer until thickened. Stir in 1/4 cup of the parmesan cheese and mix until blended. Combine the tuna, broccoli, and sauce in a large mixing bowl, stirring gently to combine.

    Spread the mixture into the prepared dish. Mix the crushed pork rinds with the rest of the parmesan cheese and sprinkle over the casserole. Bake for 20 to 25 minutes until lightly browned. Cool for 5 minutes and enjoy.
