Old Fashioned Pistachio Ambrosia Lush

 A childhood favorite that’s now a hit with my own family. Simple to make and oh so luscious. Make this old fashioned pistachio ambrosia lush and enjoy with your family too.

When I was growing up, my mom Ruthie played bridge every week either in someone else’s house or in our home.

She always made pistachio ambrosia to bring to the other person’s house who was hosting or when she hosted in our house.

And, she made sure to leave me a small dish in the fridge. 

I loved it back then and have not thought about that wonderful treat in so many years until I found the recipe my mom had given to me many years ago.

Mom made her recipe with heavy whipping cream and sugary pineapple.

I don’t think she ever made a dessert that was lower in sugar or low calorie for that matter.

However, I think this version is just as delicious with a fraction of the fat and calories than the original.

I’m sure my mom would approve though.

Making this for my kids always makes me think of my wonderful mom.

With only a handful of ingredients, you have this wonderful, fluffy dessert that not only looks beautiful tastes so luscious too.

It’s a great recipe for picnics, potluck dinners, and any gathering.

Also, it happens to be a very easy recipe to make in larger quantities.

Always a big hit with family and friends.

 Old Fashioned Pistachio Ambrosia Lush

Yields: 8 servings

Nutrition: calories 124.6, fat 3.4 g

 

What you’ll need to make this old fashioned pistachio ambrosia lush…

 

Ingredients:

  • 1 box (4 serving) pistachio pudding mix, I used sugar free for this recipe
  • 1 1/4 cups mini marshmallows
  • 1 20 oz can crushed pineapple in unsweetened juice (not drained)
  • 2 cups Cool Whip, I used fat free
  • 4 tbsp chopped finely pistachios
  • 3/4 cup slivered almonds, add more for topping
  • 1/2 cup sweetened or unsweetened coconut

There has to be mini marshmallows in ambrosia

Pistachios are a sweet nut that tastes great on their own

 

 

Cool Whip is the best!

 

Naturally sweet pineapple, no need for any heavy syrup

Here’s how to make old fashioned pistachio ambrosia lush…

Directions:

  1. In a large bowl, mix together the pudding mix and canned pineapple.
  2. When all ingredients are combined add in the marshmallows and pistachios. Fold in the Cool whip. Toss in most of the almonds but leave a few for your garnish.
  3. Spoon into 8 individual small dessert dishes and sprinkle the almonds and coconut.

Ingredients
