Cake Mix Maple Walnut Muffins

These cake mix maple walnut muffins are light as air with a combination of great ingredients that come together to give them a wonderful earthy flavor.

The recipe is so easy too.

Using a cake mix makes for an easy recipe and a delicious moist muffin. Just add a few more ingredients that you probably already have in your pantry and fridge to bring together a semi-homemade recipe that no one will even know you started out with a cake mix.

If you haven’t  used cake mixes in the past, give them a go. I find that by adding in a few other ingredients for different flavors, each time you create a new and delicious baked good. Here’s another example of a cake that starts out with a cake mix and ends up becoming a cream cheese pound cake. I’ll post a few more recipes using a cake mix down below. In the meantime, enjoy these muffins. BTW, there’s a secret ingredient that make these muffins light with the most wonderful texture. They’re so good!

Cake Mix Maple Walnut Muffins

Yields: 16 muffins

Nutrition: per muffin – calories 154.5, fat 3.6 g, carbs 28 g, fiber 0.7, sugar 15.1 g, sodium 232.5 mg, protein 2.5 g

What you’ll need to make a batch of these cake mix maple walnut muffins…

Ingredients:

  • 1 box cake mix, either butter or yellow flavor
  • 10 oz seltzer — I used mandarin orange flavor but you can use plain if you’d like
  • 3 tablespoons pure maple syrup ,most reasonable priced
  • 1 1/4 teaspoons vanilla extract, my favorite, it’s so good!
  • 1/2 tsp maple extract (optional)
  • 1 large egg or 2 egg whites, or 1/4 cup Egg Beaters (any store brand will work too)
  • 1 tsp baking powder
  • 1/8 teaspoon fine sea or kosher salt
  • 1 1/4 teaspoons ground cinnamon, only one I use
  • 1 teaspoon cinnamon mixed with 3 tbsp granulated sugar for sprinkling on top
  • 1/4 heaping cup walnuts chopped into little pieces — I used the mini chopper to do this, just pulse until you see small pieces pinch salt

Simple and easy recipe is below…

Directions:

  1. Preheat oven to 350 degrees.
  2. Line a cupcake pan with cupcake foil liners. If you can’t find foil then you can use paper liners.
  3. In a large bowl mix together the cake mix and seltzer with a rubber spatula. After combined, beat with a hand held electric mixer or stand mixer on medium speed until nice and fluffy.
  4. Add the maple syrup, vanilla extract, maple extract (optional), salt, baking powder, egg, or Egg Beaters and the 1 1/4 teaspoons cinnamon. Beat on low speed until combined. Fold in the walnut pieces.
  5. Let the batter sit in the fridge for 15 minutes. This is an important step as it makes for much larger muffin tops. After 15 minutes. Mix gently.
  6. Pour batter into muffin cups using an ice cream scoop or large cookie scoop or use a tablespoon or a serving spoon and fill cups 3/4 of the way up. You will have enough batter for 16 muffins. Sprinkle with the cinnamon sugar mixture.
  7. Bake for approximately 15 minutes or until lightly browned and a wooden skewer or tooth pick should come out clean when ready.
