Skillet Chicken and Bell Peppers

This skillet chicken and bell peppers recipe is quick and easy to prepare any night of the week. Comes out tasting so flavorful and delicious with little preparation. 

I make this with different seasonings every time for a nice change in flavor…

As you can see, I posted a few different photos of how this chicken dish turns out. That’s because each time it’s made, the seasonings are changed around. Most of the time I used what’s listed above. A few times I used Cajun seasoning like the original recipe my daughter made. The photo below is the first one she sent me from collage years ago. She added spinach in this one. 

When my daughter Tori was in collage, this was a staple recipe she would make for herself and roommates.

As busy as she was with studying, she always made time to make a healthy and filling dinner for the four of them.

Today, she is a wife and a smarty pants attorney. And, she still prepares healthy and delicious meals for her and her hubby.

Tori happens to be an amazing baker as well. Her banana bread and peanut butter cookies are the best!


The chicken and bell peppers come out nicely seasoned. It’s a quick and easy recipe that takes only a little bit of time to prepare.

It’s so good, I make this at least once a week for my hubby and son Josh.

Skillet Chicken and Bell Peppers

Servings: 4

Ingredients:

  • 4 boneless chicken breasts, cut into strips or chunks 
  • 1 large green, yellow and red bell pepper, cut into strips (Or use any combination of peppers of choice)
  • 1-2 garlic cloves chopped or, garlic powder to taste
  • 1 teaspoon dried oregano or Italian seasoning 
  • 1/4 teaspoon red pepper flakes, this is optional for a little heat
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • 2 tablespoons olive oil 

 

 

 

 

 

 

Directions:

  1. Rinse chicken cutlets in cool water and pat dry with paper towels. Cut into medium chunks or strips.  Season with above seasonings.
  2. In a large non stick skillet or fry pan, add 1-2 tablespoons oil,  let heat up just for a few seconds. Toss chicken in. Sprinkle seasoning over and toss until chicken is done with some charred edges. Should be no pink inside and clear juices running through. Put chicken on a place an cover with foil to stay warm.
  3. Add 1 more tablespoon olive oil in same pan, toss in prepared peppers. Add a little more seasoning. Cook just until softened and if you like them charred, let cook a little longer. Add garlic if using and toss to soften. Or, sprinkle in the garlic powder and toss. 
  4. Add back the chicken and toss together with the peppers. Taste for more seasoning if needed. Serve alone or over rice. Plate up and enjoy!
