Easy Creamy Cucumber Salad

This recipe for easy creamy cucumber salad prepared in no time at all. It’s made with ingredients you probably already have in your fridge and pantry. Your cucumber salad will come out tasting refreshingly, creamy delicious. Enjoy!

You probably have seen many recipes on the internet for cucumber salad. I have.

They all seemed like they would be tasty.

So, I decided to make my own version.

Also, while shopping at my local grocery store, I went to the deli counter to pick up my weekly lunch meats for my husband and son and sitting in in their deli case along with a bunch of cold salads was a creamy looking cucumber dill salad.

After inquiring about what they put in their salad the man behind the counter was nice enough to tell me how they made it.

He also gave me a great tip that I will share with you in the directions for my cucumber salad recipe below.

This easy creamy cucumber salad could actually be called a copycat recipe since it’s almost exactly like the one from my grocery store deli department.

Instead, it’s called what it is, an easy creamy cucumber salad.

It’s is just perfect for a side dish with any protein.

We had it with burgers and corn on the cob. My son and hubby loved it and any leftovers were gone by the morning.

I think my son ate the rest before bedtime. He’s 14 and always hungry.

If you are planning on any larger gatherings, this can be easily doubled, tripled, you get the picture.

Potluck dinners, oh yea, a great addition to all the other dishes served. I bet this salad would be one of the first to go and also, you’ll be asked for the recipe. Bring some copies with you!

What Kind Of Cucumbers Are Used In This Recipe?

For this cucumber salad and any salad made with cucumbers, the best type would be an English,  Hot House, or Burpless Cucumber. These varieties have a soft skin and you don’t need to peel them to eat. They are long and thin. The inside has very little or no seeds at all. You will see them wrapped in plastic at the markets. You should still rinse the outside of the cucumber like you would with other fruits and vegetables but, since the skin is so tender and sweet, don’t peel them. You can find them in any supermarkets, grocery stores, farmers markets, and fruit and vegetable stands. Just a note, the field cucumbers you see in markets that have a tough, thick, shiny skin which is usually waxed and really would not be suggested in this salad. If you do use one of those, you must rinse, seed, and peel them. 

 

What’s In This Creamy Cucumber Salad? 

Other than cucumbers, there’s only a handful of everyday ingredients found in your fridge. 

 

Here are the ingredients at a glance:

  • English, Hot House, Burpless, cucumbers
  • Medium red onion, sliced thinly
  • Sour cream, regular or low fat work, fat free will not work in this recipe. Another option would be Greek yogurt
  • Mayonnaise, regular really works best for this recipe, you can try a slightly reduced fat but again, fat free will not work for this recipe
  • White vinegar
  • Granulated sugar, you can swap out with Splenda, or any non calorie sweetener of choice. Just start with a pinch then to taste
  • Sea or kosher salt
  • Ground white pepper, this is optional

A One Bowl Recipe For Easy Creamy Cucumber Salad…

Here are the simple and easy directions:

  1. Rinse cucumbers under cool water. On a sturdy cutting board, cut off both ends of each cucumber. You can throw those away. Slice into thin to medium pieces. 
  2. Peel the red onion and in half and then into half moons. Make thin slices like photo above. 
  3. In a large mixing bowl, add the cucumbers and sliced onions. Toss gently with a large spoon or clean hands. 
  4. In a small to medium mixing bowl, combine the sour cream and mayo. Mix to combine. Add remaining ingredients. Pour over cucumber onion mix. Toss gently with a large spoon or rubber spatula until all the cucumbers are coated with dressing. 
  5. Here’s the tip the nice man gave me at the deli department, after you place in a serving bowl. The salad must sit covered in the fridge for at least one to two hours before serving. The flavors need to meld together for the best taste. You can refrigerate up to 6 hours if needed. When you take out of the fridge, give a gently stir again. Sprinkle on more dill for a nice presentation. That’s it, now you have a beautiful looking cucumber salad all ready to dig in to! 

 

How long Can This Stay In The Fridge? 

This delicious creamy salad is best eaten within a day or two. You must keep it tightly covered. When you take out, toss gently and you may want to add in a half cut up cucumber and a little more fresh dill.

Easy Creamy Cucumber Salad

This is the most delicious and easy to make cucumber salad. Great as a side dish. Great for potluck dinners and larger crowds too. Enjoy the deliciousness!

Ingredients

  • 2 English, Hot House/Burpless Cucumbers
