
This is one simple and easy recipe that always comes out tasting so delicious. A healthy dish that's great on it's own or with some added protein.
1. Place quinoa in a strainer or sieve. Run cold water over the dried quinoa a few times. Shake off excess water. 2. In a medium pot, add quinoa and water, with a pinch of salt. Cover, bring to boil, then reduce to a simmer for 10 minutes. Remove from heat, let stand for 5 minutes, then fluff with a fork. Set aside.
3. In a food processor, add broccoli in batches and pulse until coarsely chopped or, chop by hand. 4. Combine all ingredients in a large bowl, then toss. Place in fridge until chilled. Serve up and ENJOY!
