So Simple Broccoli Quinoa Salad

This is one simple and easy recipe that always comes out tasting so delicious. A healthy dish that's great on it's own or with some added protein.

Ingredients

  • 1 cup uncooked quinoa
  • 1 1/2 cups cold water
  • 1 pound fresh broccoli, chopped
  • 1 tablespoon basil, finely chopped or 1/2 tsp dried basil
  • 3 tablespoons olive oil
  • zest of one lemon
  • fresh lemon juice from a half of lemon
  • 1/2 teaspoon sea salt plus a pinch for boiling water. Add more salt to taste after dish is complete.
  • 1/4 teaspoon ground black or white pepper, or to taste
  • 1/2 teaspoon garlic powder, this is optional

Instructions

  1. 1. Place quinoa in a strainer or sieve. Run cold water over the dried quinoa a few times. Shake off excess water. 2. In a medium pot, add quinoa and water, with a pinch of salt.  Cover, bring to boil, then reduce to a simmer for 10 minutes. Remove from heat, let stand for 5 minutes, then fluff with a fork.  Set aside.

    3. In a food processor, add broccoli in batches and pulse until coarsely chopped or, chop by hand. 4. Combine all ingredients in a large bowl, then toss. Place in fridge until chilled. Serve up and ENJOY!
