Simple Steps to Grill Thinly Sliced Veggies

Ingredients

  • 1 large eggplant
  • 2 small yellow squash
  • 2 small zucchini
  • 2-3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • coarse sea or kosher salt to taste
  • ground black pepper to taste

Instructions

  1. 1.Heat grill to 400 degree

    2.Line grill with foil to keep vegetables from sliding through the grates.

    3.Cut vegetables lengthwise if using on a sandwich, or any desired uniform method.

    4.In a large bowl mix olive oil and vinegar, then toss in vegetable to coat evenly.

    Roast vegetables turning often until edges are browned and vegetables are tender.
