Simple English Muffin Veggie Pizza

These are the best quick and easy recipe that’s great for lunch or dinner. They make great afterschool snacks too. Make some up soon and enjoy the ease and deliciousness!

Ingredients

  • 3 English Muffins
  • tbsp part skim shredded mozzarella cheese6
  • 2 tbsp parmesan cheese
  • 3/4-1 cup canned tomato sauce
  • 4 white mushrooms sliced
  • 1/2 small red onion, sliced
  • 1/4 yellow or orange pepper, sliced
  • 1/2 tsp each coarse salt and black pepper
  • 1/2 tsp each garlic powder and dried oregano

Instructions

  1. 1.Preheat oven to 350°

    2.Use a fork to gently split open the English Muffins.

    3.Place each half on a baking sheet, you can line with foil or parchment paper if needed.

    4.In a small saucepan, combine sauce with salt, pepper, garlic powder and oregano. Let heat up, no need to boil.

    5.Now, add about 2 tablespoons sauce to each opened English Muffin.

    6.Top each half with 1 tablespoon mozzarella along with a sprinkle of parmesan cheese.

    7.Add sliced mushrooms, red onion and yellow pepper slices to each half.

    8.Bake for about 15-20 minutes, until cheese is melted. That’s it! Enjoy!!
