English Muffin Veggie Pizzas

Growing up, English Muffins were a staple in my house.

My mom Ruthie would serve us these for breakfast slathered with butter or cream cheese.

Sometimes she would throw a piece of American cheese in the middle for a quick sandwich.

We just loved them no matter what she put on or in them.

Nowadays, it’s like nothing has changed in my house with my husband and kids.

When not sure what to eat, grab an English muffin.

With all the new varieties it’s nice to be a little creative whether you want a cinnamon sugar muffin or a lighter muffin.

We like the crispiness that you don’t always get with plain bread slices.

This really simple recipe is so delicious. I make it for myself many afternoons while working from the house.

My kids and husband enjoy these for dinner. Served with a salad it’s a nice lighter meal. Put any veggies you like, for the meat eaters, add some mini pepperoni.

English Muffin Veggie Pizzas

For this recipe, yields: 6 servings

What you’ll need to make some english muffin veggie pizzas…

Ingredients:

  • 3 English Muffins, I used light for this recipe
  • 6 tbsp part skim shredded mozzarella cheese
  • 2 tbsp parmesan cheese
  • 3/4 to 1 cup canned tomato sauce
  • 4 white mushrooms, sliced
  • 1/2 small red onion, sliced
  • 1/4 yellow or orange pepper, sliced
  • 1/2 tsp coarse sea or kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder

Here’s the easy way to make english muffin veggie pizzas…

Directions:

  1. Preheat oven to 350°
  2. Use a fork to gently split open the English Muffins.
  3. Place each half on a baking sheet, you can line with foil or parchment paper if needed.
  4. In a small saucepan, combine sauce with salt, pepper, garlic powder and oregano. Let heat up, no need to boil.
  5. Now, add about 2 tablespoons sauce to each opened English Muffin.
  6. Top each half with 1 tablespoon mozzarella along with a sprinkle of parmesan cheese.
  7. Add sliced mushrooms, red onion and yellow pepper slices to each half.
  8. Bake for about 15-20 minutes, until cheese is melted. That’s it!
