Microwave Chocolate Peanut Butter Baked Oats

Ingredients

  • 1/2 cup old fashioned oats, you can use quick oats too
  • 3/4 scoop chocolate protein powder, I like Quest whey/casein blend
  • 1 tbsp unsweetened cocoa powder, I used Hershey's Dark
  • 3/4 -1 cup milk of choice, I like almond milk or Farilife (for extra protein)
  • pinch salt
  • pinch baking powder
  • 1 - 2 tbsp peanut butter of choice
  • 1 tsp dark chocolate chips, this is optional

Instructions

  1. Important note: The microwave bowl gets very hot. Make sure you use a dish towel or pot holder when taking out of the microwave and placing back in.

    In a small microwave safe dish or mug, place all the ingredients except the peanut butter and combine with a fork. 

    Place in the microwave for 1 minute. Take out and stir. Put back into the microwave for 30 seconds. Take out again, stir and put back in for another 30 seconds or until you reach the texture you like.

     Let sit out for just a minute or two while you place the peanut butter in a small microwave safe dish. Microwave for about 30 to 40 seconds. Take out and stir.

    The peanut butter should be thinner and slightly pourable. If not, put back in for another 15 seconds. Take out and either spoon over the oats or drizzle. Eat up and enjoy!
