Frozen Raw Tahini Truffles

Ingredients

  • 1/2 cup tahini
  • 1/2 cup honey, agave or coconut nectar
  • 1/4 cup coconut flour
  • 1 drop or packet stevia, optional
  • 1/8 tsp or small pinch sea salt

optional toppings: •raw cacao nibs •Goji berries •unsweetened coconut •sea salt •unsweetened cocoa or cacao powder

Instructions

  1. Have a cookie sheet lined with parchment paper and place in fridge while preparing the truffles.

    1.In a medium mixing bowl, add all the ingredients except toppings.

    2.Mix with a heavy rubber spatula. Combine well.

    3.Roll into balls and place on cookie sheet from fridge. If you want, sprinkle toppings or roll in cocoa powder.

    4.Place in freezer until slightly firm or firm. When ready to serve, take out and serve right away. Any leftovers should be kept in an airtight container in the freezer for up to 1 month.
