Fresh Strawberry Jam

This delicious and oh so easy recipe has only 4 ingredients for the freshest and most heavenly tasting strawberry jam. Everyone goes wild for this jam!

Ingredients

  • 2 cups rinsed, hulled, and sliced fresh strawberries
  • 2-3 tablespoons coconut sugar or dry sugar of choice no calorie sweetener works too such as Stevia or Splenda
  • juice of one small lemon
  • 1 teaspoon arrowroot flour or cornstarch, mix to get out clumps before adding
  • smallest pinch salt

Instructions

  1. 1. Mash the sliced strawberries with a potato masher until almost smooth but with a bit of texture.

    2. Mix the fresh lemon juice and coconut sugar in a small saucepan and cook over low heat until it turns into syrup.

    3. Add the mashed strawberries and continue cooking on low for 4 to 5 minutes, stirring continuously.

    4.Add the arrowroot or cornstarch, stir well, and continue cooking. Bring to a slight boil. Then, reduce the heat and simmer for 7 to 10 minutes over low heat until thickened.

    5. Cool, stirring periodically. Enjoy!
