Ingredients

  • 1 /12 cups Shredded cheeses, I used cheddar, If you want a these crackers to have an added zing of spice, you can mix in some pepper jack cheese
  • 1/2 cup grated parmesan cheese
  • 1 tbsp Cajun Spice of choice, I used this one I found at the grocery store and a little bit cheaper on Amazon, McCormick Gourmet Cajun Seasoning 
  • 1 tsp dried oregano
  • 1 to 2 tsps fresh parsley chopped up finely, or 1/2 tsp dried parsley
  • Optional, a pinch of coarse sea or kosher salt, taste before adding to the mixture for best results 

Instructions

  1. Preheat oven to 350 degrees. Line baking sheet or rimmed cookie sheet with parchment paper. Mix the cheeses, Cajun seasoning, oregano, and either dried or fresh parsley together. Mix gently but make sure everything is incorporated. Using an ice cream scoop so that each cracker is the same size. Scoop out and even off the scoop when filled. Drop each scoop onto the parchment lined baking sheet. Bake for 5-10 minutes or until lightly browned and crispy. Try not to burn these yummy crackers. Let cool for a few minutes. Then transfer to a serving plate or bowl. Best when eaten the same day or the crackers can be stored up to 2 days in the fridge in a sealed container or 1 day sealed on the counter.
