Preheat oven to 350 degrees. Line baking sheet or rimmed cookie sheet with parchment paper. Mix the cheeses, Cajun seasoning, oregano, and either dried or fresh parsley together. Mix gently but make sure everything is incorporated. Using an ice cream scoop so that each cracker is the same size. Scoop out and even off the scoop when filled. Drop each scoop onto the parchment lined baking sheet. Bake for 5-10 minutes or until lightly browned and crispy. Try not to burn these yummy crackers. Let cool for a few minutes. Then transfer to a serving plate or bowl. Best when eaten the same day or the crackers can be stored up to 2 days in the fridge in a sealed container or 1 day sealed on the counter.
