Copycat New York Diner Cantaloupe

You can put together this refreshingly sweet copycat New York diner cantaloupe in less than five minutes. Great for breakfast, lunch, or a healthy and delicious snack, you name it.

Ingredients

  • 1/2 medium cantaloupe (save the other half for the next day)
  • 1/2 - 3/4 cup Greek yogurt of choice or Cottage cheese
  • 1/2 cup fresh or frozen blueberries and raspberries If frozen, thaw slightly and drain
  • 1/2 cup nuts of choice
  • optional a dollop of whipped cream or more yogurt on top or a drizzle of honey

Instructions

  1. 1. Rinse the outside of the melon with cool water. Pat dry. Cut the melon in half and wrap one half with plastic wrap and store in fridge until you’re ready to use. Keeps in fridge, wrapped tightly up to 2 days.

    2. Cut a very small slice on the bottom of your cantaloupe slice so that it doesn’t roll around. See in photo above.

    3. Scoop out all the cantaloupe seeds and discard.

    4. Fill with Greek yogurt or cottage cheese, smooth out.

    5.  Add the berries on top. Toss on some nuts of choice. I added sliced almonds that came toasted for the yogurt and walnuts for the cottage cheese.

    6.Then, I drizzled honey over the one with cottage cheese and added a dollop of whipped cream over the one with the Greek yogurt. That's it! Enjoy this refreshing treat either way.
