Chocolate Valentine Sandwich Cookies

Two cakey chocolate cookies sandwiched together with lots of fluffy frosting. Then, coated in fun Valentine colored sprinkles.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine salt, I used sea salt
  • 1/2 cup granulated sugar
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract
  • 1 large egg
  • 2-3 tbsp  cold water

fluffy frosting

  • 1/2 cup unsalted butter, softened
  • 4 cups powdered or confectioner sugar
  • 3 tbsp heavy cream
  • 1 1/2 tsp pure vanilla extract
  • sprinkles of choice, I used Valentine colored sprinkles

Instructions

  1. Preheat the oven to 375 degrees. Then, line a baking sheet with parchment paper or a silicone mat. Whisk the dry ingredients together in a bowl. Cream the butter and sugar with an electric mixer until light and fluffy. Add the egg, water, and vanilla and mix until incorporated. Mix the dry ingredients with the wet ingredients a little at a time until the dough forms. Scoop out rounded teaspoons of cookie dough and roll them into balls. Flatten them a bit with your fingers. Place the dough on the baking sheet and bake for 5 to 7 minutes until they’re set. Cool the cookies completely on a wire rack.
