Chocolate Peanut Buter Baked Oat

Chocolate peanut butter baked oats are a deliciously sweet start to the day you can feel good about. Like a healthy dessert for breakfast, these oats are made with peanut butter and dark chocolate chips to make a sweet peanut butter and chocolate treat loaded with fiber and healthy fat.

Ingredients

  • 1/3 cup quick cooking oats
  • 1 level tablespoons chocolate protein powder
  • 1/3 cup milk of choice, I used almond milk
  • 1 medium to large egg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon plus 1 teaspoon maple syrup or honey
  • 1 slightly heaping tablespoon dark cocoa powder
  • 1/2 teaspoon baking powder
  • 2 tablespoons dark chocolate chips – divided
  • dash salt, I used fine sea salt
  • 2 1/2 teaspoons peanut butter, I used natural

Instructions

  1. Preheat the oven to 350 degrees, spray a ramekin with non-stick cooking spray. Set aside. Blend all the ingredients except the chocolate chips in a mini chopper, food processor, or high-speed blender. Blend until almost smooth but with a little texture from the oats. Pour half the batter into the prepared ramekin. Then, sprinkle 1 tablespoon of chocolate chips over it, along with 1 tablespoon of peanut butter. Then, pour in the remaining batter and top with the remaining chocolate chips. Bake for 20 to 25 minutes until the top is slightly domed. The inside should be gooey in the center and cakey around the edges. Cool for 5 to 10 minutes and enjoy!
