Chocolate Covered Snickers Dates - A better-for-you treat!

You can enjoy all the tastes and textures of a Snickers bar but made healthier in these Snickers Dates. Chocolate dipped dates are filled with peanut butter and chopped peanuts. They seriously mimic a Snickers Bar!

Ingredients

  • 10 large Medjool dates, pits removed
  • 3 tablespoons peanut butter, use any nut butter or seed butter of choice. Salted or unsalted I used unsweetened
  • 1/4 chopped or halved salted or unsalted dry roasted peanuts
  • 3/4 - 1 cup semisweet or milk chocolate chips milk chocolate will taste more like a traditional Snickers Bar
  • 1 teaspoon solid refined coconut oil refined has no coconut flavor

Instructions

  1. 1.    Cut each date in half and remove the pits. Spread each date a little to make it easier to fill. (Good tip, when you remove the pits, put them in a row and when done removing all the pits from the dates you are using, make sure the amount of pits is the same as the amount of prepared dates.)

    2.    Add a little over a 1/2 teaspoon of peanut butter in each date. (Either spoon in with a teaspoon or place peanut butter in a Ziploc bag, push all the way down to one corner, cut a small slit and fill the date that way.) Top with some chopped or halved peanuts. Close the dates to keep the peanut butter and chopped peanuts inside. Set aside on a parchment lined plate or small rimmed cookie sheet. Set aside while melting the chocolate chips.

    3.    In a microwave safe bowl, add the chocolate chips of choice along with the teaspoon of solid coconut oil. Microwave for about 20 seconds. Take out, stir and put back in the microwave for 15 seconds. Take out, stir again.  Do this another one or two times until the chocolate is smooth and shiny. 

    4.    Using a fork, dip each filled date into the melted chocolate until completely coated. Use the fork to let the extra chocolate to drip off back into the bowl. Set each date onto a rimmed cookie sheet or cutting board. When all finished, place plate or cookie sheet into the freezer for just 10 minutes or until set. When set, you can store the dates in a sealed container in fridge up to 5 days. Enjoy!
