Baked Apples with Crumble Topping

Everyone loves these amazing baked apples. It's like eating apple pie inside a warm apple. Great for dessert with a scoop of ice cream and for breakfast, cold from the fridge with a dollop of Greek yogurt. Anyway, these are so delish!

Ingredients

  • 4 large 4 large apples, (honey crisp, Braeburn orEmpire work best)
  • 1 1/8 cups old fashioned oats
  • 1/2 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 1/4-1/2 teaspoon ground ginger
  • 1/8 teaspoon salt, I used sea salt
  • 2 1/4 tablespoons melted unsalted butter cooled
  • 2 1/4 tablespoons pure maple syrup
  • 1/2 cup apple cider, or you can use apple juice

Instructions

  1. 1. Slice the tops of the apples off and remove the stem with a sharp knife. Cut about halfway down the middle of the apple to remove the core.

    2. Spray an oven safe dish with nonstick spray. Set aside.

    3. Combine the oats, pecans, spices, salt, maple syrup, and melted butter. Place the apples in the baking dish and divide the oat pecan mixture evenly between them, press the mixture down into the center a bit. Add apple cider to the bottom of the dish, cover with foil, and bake for 30 minutes, basting every 5 to 10 minutes until tender. If needed, add more liquid on the bottom. Remove the foil in the last 5 minutes of cooking. The apples should be fork tender. Enjoy!
