The Best Chicken Salad Recipe

This easy-peasy recipe turns out so delicious with just a handful of everyday ingredients that makes the best chicken salad. Hope you make some and enjoy!

Ingredients

  • 2 - 2 1/2 cups precooked chicken, shredded, I used two large boneless, skinless chicken breasts, boil in chicken stock or water. Or, sauté  in chicken stock or in oil or butter until no pink is inside and temperatures is at least 165 degrees.   
  • 1/2 cup mayonnaise, you could use a light mayo but not fat-free, you can use more if you like your chicken salad extra creamy
  • 1 stalk celery, diced
  • 1/2 - 1 teaspoon Dijon mustard, start with 1/2 teaspoon, taste test after the chicken salad is mixed
  • 1/4 - 1/2 teaspoon salt, I used sea salt, kosher salt is good too
  • 1/4 teaspoon black or white pepper
  • 1/2 to 3/4 teaspoon dried dill (This is optional but adds a great flavor) Fresh dill is great too. Use 1 to 2 teaspoons or however you want
  • 1 tablespoon fresh chives, chopped to serve over the as a garnish and great flavor

Instructions

  1. 1. Cook the chicken as stated above with ingredients. Take two forks and shred the chicken while it's still warm. It's easier when the chicken is warm rather than cold. Place in fridge until chilled.

    2. Combine the shredded chicken, mayo, celery, mustard, salt, pepper, and dill in a large bowl. Stir the ingredients to combine and add more salt and pepper if needed. Top with chives and serve as sandwiches on croissants or soft bread and over lettuce. Enjoy!
