Have a cookie sheet lined with parchment or wax paper, set aside. On a microwave safe plate, place the caramels in microwave for about 15 to 25 seconds, just to soften up a little. Set aside. (Do not completely melt them, you want them to keep their shape, the Werther's don't really need to soften up. I found them to be soft enough.)In a small microwave safe dish, melt chocolate for about 30 seconds. (If using the small amount of coconut oil, add it with the chips. Remove from microwave and stir. Place back in microwave for another 30 seconds, stir again. Do this for another 10 to 15 seconds until the chocolate is completely melted and smooth. By mixing the chocolate, it should turn shiny. May take another 20 seconds of mixing to see the chocolate shine. With a wooden skewer, plastic fork or small spoon toss the caramels in the chocolate. You will have enough to coat them. Place the chocolate coated caramels on the baking sheet that you lined with parchment paper or wax paper. Let the chocolate caramels set. After about 15 minutes sprinkle the salt over each chocolate square. Let them finish setting and enjoy. This could take about an hour or so. You can put them in the fridge after the salt in on for only 5 minutes and then let them set on the counter. This is important because if you leave them in the fridge longer, the Kraft caramels will harden and get too hard.Recipe Note: For best results, keep in an airtight container on the counter and eat within one to two days for best taste and freshness.
