Easy Easter Bunny Cupcakes

Here’s a fun and simple recipe for you and the kids to make around Easter or anytime of year. These Easy Easter Bunny Cupcakes come out really delicious. 

 

Easter is right around the corner!

This year will be especially special since we can get together with a few more family members.

I have two little nieces that we missed so much last year and are coming to my house for Easter brunch.

Each year, my son Josh and I think up some fun food craft projects to do with the girls.

This year, Josh and I made these yummy and oh so cute Easy Easter Bunny Cupcakes. We practiced making them a few weeks ago to test out the recipe. Success!

You can see in the photos how adorable the finished cupcakes came out.

You can also see that the finished project is not perfect. Maybe even a little messy on the bunny ears.

Well, that’s the way a home food project should be in my opinion.

These are homemade, not from a bakery where they come out pretty much flawless.

We are so excited for my nieces to make their own Easy Easter Bunny Cupcakes to enjoy with us and take home for the next day.

Check out the very easy and fun recipe that you too can make with the kiddos or, make them yourself and give them out. Happy and fun Easter!

Recipe Notes:

Box mixes usually yields 24  cupcakes. We made 18 regular size cupcakes and had some batter left over and made a few plain mini cupcakes to freeze and save for another project.

You can frost cupcakes anyway you want to. The skies the limit with your own creation. Here is a fun suggestion, add sweetened grated coconut on top to mimic bunny fur. Do this on some of the cupcakes and leave the others without the shredded coconut. Have fun and enjoy, these cupcakes, they taste so yummy!

Yields: about 18 frosted cupcakes

 

 

What Ingredients Other Than A Cake Mix Go Into Making These Adorable Bunny Cupcakes?

In a glance, here are the simple ingredients…

 

 

  •  box white or yellow cake mix, plus ingredients on the box
  •  tubs white frosting, I like the the kind that says “whipped” 
  •  large marshmallows
  •  small or regular jellybeans 
  • red or pink sanding sugar
  • shredded sweetened or unsweetened coconut, this is optional (see recipe note above)

Optional supplies:

  • paper or foil cupcake liners
  • piping bag or Ziploc with or without star tip ( If you decide to frost these yummy cupcakes, you’ll see in directions, they are easily frosted with a butter knife or a small offset spatula this is the one I use often)

 

 

 

 

How Are These Cute And Yummy Easy Easter Bunny Cupcakes Made?

Here’s the easy and fun directions…

 

  1. Bake cupcakes according to package directions. 
  2. Let cool completely before frosting and decorating.
  3. When cupcakes are completely cooled, you can use the piping bag, place the star tip at the bottom of the bag and pierce to open up and push the tip through. Then squeeze the frosting all the way down towards the tip. Or if using a Ziploc bag, fill bag with one tub of frosting at a time, squeezing all the way down to one tip of the bag. Make a small cut at the tip and frost. To frost the regular way, you many want to use the shredded coconut on top to look like bunny fur or leave plain. The bunny ears and jelly beans will surely look like a bunny!
  4. Cut marshmallows diagonally to create bunny ears. I used kitchen shears that I bought at the dollar store or these I got online. 
  5. Dip the ears in the sanding sugar. The cut side should be sticky enough, if not, lightly coat with a little cold water then dip into the sugar.
  6. Once you have your cupcakes frosted, this is the time you may want to sprinkle a little shredded coconut if using. Then place two sugar coated ears on each cupcake. Place a jellybean where the nose should be. Hope you have lots of fun making these Easy Easter Bunny Cupcakes like my son and I did.
