White Chocolate Oatmeal Christmas Cookies

These Christmas cookies come out soft and chewy on the inside with a nice crisp on the outside. Best texture cookies with all the deliciousness a Christmas cookie should have. Enjoy!

Ingredients

  • 1 cup cold unsalted butter cut into chunks
  • 1 1/4 cups light brown sugar, lightly packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature is best
  • 2 cups all purpose flour
  • 1/2 cup cake flour
  • 1 1/2 cups old fashioned or rolled oats
  • 1 tsp corn starch
  • 3/4 tsp baking soda
  • 1/2 tsp salt, I use sea or kosher salt
  • 1/2 tsp cinnamon
  • 1 1/2 cups white chocolate chips
  • 1 cup mini M&Ms I used red and green

Instructions

  1. Preheat the oven to 375 degrees.

    In a bowl of a stand mixer add the butter and sugars. (You can use a hand mixer too)

    Mix on low for 1 minute then move up to medium until light and fluffy, about 3 minutes.

    Add eggs one at a time to the sugar mixture, with the mixer speed on low mixing after each egg.

    In a large mixing bowl, add cake flour, all-purpose flour, oats, cornstarch, baking soda, salt and cinnamon and whisk until combined.

    Slowly add the dry mix into the sugar mixture, mix on low speed.

    Add in the white chocolate chips and M&M’s, mix on low until combined.

    Cover the dough with plastic wrap and chill dough for 15-20 minutes.

    Using a large cookie scoop, create the dough into large balls and place on parchment paper or silicone mat covered baking sheet or cookie sheet that's rimmed.

    If you have a scale, have the dough balls be from 3.5 ounces - 4.0 ounces.

    Lightly press on top of dough using your hands to flatten slightly.

    Place only up to 5 cookies on one large cookie sheet.

    Bake for 9-13 minutes or until golden brown on the top. Enjoy!
