Vanilla Hanukkah Cupcakes

These vanilla Hanukkah cupcakes are a very simple and easy recipe. The cupcakes always come out so delicious and everyone loves when I serve them. Great for year round. Just change the cupcake liners and sprinkles. Leave them plain, the cupcakes are perfect as is too. Enjoy!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 large egg
  • 1 large egg white
  • 1/3 cup unsalted butter or margarine, melted and cooled.
  • 1/2 cup cold water
  • 1/2 cup baby applesauce, or regular unsweetened applesauce
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine sea or kosher salt

Frosting

  • 6 to 8 tablespoons marshmallow fluff or prepared vanilla frosting I like the fluffy kind in a tub
  • assorted sprinkles and nonpareils of choice

Instructions

  1. 1. Preheat oven to 350 degrees, line a 12 cup muffin pan with cupcake liners and set aside.

    2. In a large mixing bowl, mix the butter, sugar, egg and egg white, water, and vanilla extract with a wire whisk. Add the dry ingredients and switch over to a rubber spatula to make sure all the flour is well incorporated.

    3. Now using a hand held mixer, beat for about 2 minutes or until nice and fluffy. Place in fridge for 5 minutes. Pour the batter into a large glass measuring cup with a spout for easy filling. (The batter will be thin)You will have just the right amount to fill 12 cups about 3/4 the way up.

    4. Bake for about 20 to 25 minutes, rotating the pan half way through. When the tops look lightly browned and they spring back the cupcakes are done. You can test them with a toothpick, Should be dry crumbs or no crumbs. Let cool completely on wire rack.

    5. Take 1/2 tablespoon of the fluff or prepared frosting and dollop on each cupcake. Decorate with your choice of sprinkles and enjoy!
