Sweet Potato Bites

My sweet potato bites with marshmallows and pecans are a bitesize, poppable mini sweet potato casserole all in one. These sweet potato slices are baked until tender. Then, they're topped with maple syrup and a marshmallow and baked again. Then, I serve them with a pecan half on top. Yummy!

Ingredients

  • 4 large/thin sweet potatoes
  • 6 large/regular size marshmallows
  • 3 tbsp melted unsalted butter
  • 2 tbsp pure maple syrup
  • 12 pecan halves
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 400 degrees. Peel each sweet potato into 6 even slices. Lay the potatoes in a 13 x 11 glass baking dish or rimmed baking sheet. Brush each potato slice with melted butter on both sides. Then, sprinkle with salt. Place baking dish in preheated oven for 15 to 20 minutes. Take out and flip each potato slice over and put back into the oven for another 10 to 15 minutes. Drizzle with maple syrup.  Place half a marshmallow on top.  Bake for another 5 minutes or turn to broil and let the marshmallows toast up for about 2 minutes. Take out of the oven and place a half pecan right away. Plate up and enjoy while these are still warm from the oven. Enjoy!
