Quinoa and Feta Salad

This quick and easy recipe is just delicious as a side dish or main course. Add some extra protein for a filling meal. Enjoy!

Ingredients

  • 1 cup quinoa (=3 cups cooked)
  • Juice of 2 lemons, about 1/4 cup
  • 1/4 cup olive oil, extra virgin olive oil works the best in this recipe
  • 1 English/hot house cucumber, seeded and diced
  • 2 cups cherry tomatoes, cut in half, you can use grape tomatoes also
  • 1/8 tsp dried cilantro, basil, or oregano add more to taste
  • 1/2 tsp ground pepper
  • 1/2 tsp coarse sea salt
  • 2 cups feta cheese, diced

Instructions

  1. 1. Cook the quinoa as per the package directions.  Set aside to cool.

    2. Combine the remaining ingredients in a large bowl, minus the feta.

    3.  Add the cooled quinoa and mix well.  Then fold in the feta. Serve at room temperature or refrigerate and serve cold. Enjoy!
