
1.Preheat oven to 400 degrees. Line a rimmed cookie sheet with foil, silpat, or parchment paper. Set aside.
2.Place garlic in a medium mixing bowl. Drizzle olive oil over the garlic. Gently toss around with your fingers or large spoon.
3.Spread single layer onto prepared cookie sheet.
4.Sprinkle salt and pepper over all the garlic.
5.Roast in oven about 40 minutes. Check after 20 minutes and rotate the pan as well as move to another rack in the oven.
6.The roasted garlic should still hold their shape but be fork tender and golden brown. If they still need some more time in the oven, place back in for another 5 to 10 minutes and check again.
7.Eat right away or let cool down. Can be stored in fridge up to 5 days. Enjoy!
