
This easy recipe turns out the most delicious lemon truffles that are melt in your mouth delicious. Elegant to serve for company yet easy enough for any weeknight dessert.
Melt the white chocolate chips, butter, heavy cream, and salt in a double boiler until completely smooth. Alternatively, you can melt the mixture in the microwave at 20-second intervals, stirring between each interval, until melted and smooth.
Add in the lemon zest, lemon juice or lemon extract. Add 1 to 2 drops of yellow food coloring if using.
Cool the mixture to room temperature, then cover with plastic wrap and refrigerate for 2 to 3 hours until firm enough to roll into balls.
Scoop out the cooled mixture into 1-inch balls and roll into smooth balls with clean hands.
Place the truffles on a rimmed and lined cookie sheet with parchment paper or a silpat.
Roll the truffles in powdered sugar to coat and store in the refrigerator until ready to serve. Enjoy!
