Lemon Poppy Seed Donuts

Ingredients

Donuts

  • 1 cup spoon & leveled all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda make sure baking soda and powder are fresh
  • 1 tablespoons poppy seeds
  • 1/2 teaspoon fine salt or kosher salt
  • 2 tablespoons unsalted butter, melted and cooled slightly melted and slightly cooled
  • 1 large egg room temp
  • 1/3 cup granulated white sugar
  • 1/4 cup whole or 2% dairy milk, you can use almond milk or oat milk too
  • 1/4 cup regular sour cream, don't use fat free in this recipe
  • 1 1/8 teaspoons pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 1/4 tablespoons lemon zest

Glaze:

  • 1 cup powdered sugar
  • 1-2 tablespoon whole milk
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons unsalted butter melted

Instructions

  1. Preheat oven to 350 degrees.
  2. Prep donut pan with nonstick baking spray.
  3. Add flour, baking powder, baking soda, poppy seeds, and salt in a large bowl.
  4. Whisk to blend.
  5. Add the melted butter, egg, sugar, milk, sour cream, vanilla, lemon juice, and lemon zest in a bowl.

  6. Whisk until combined.
  7. Slowly add the wet ingredients to the dry ingredients. Mix until all ingredients are just combined.
  8. This batter will be thick.
  9. Spoon the batter into a pastry bag with a round tip.
  10. Fill each donut well to 2⁄3 rds filled.
  11. Bake at 350 degrees for 9-10 minutes or until the edges are lightly browned.
  12. Transfer the donuts to a cooling rack.
  13. Allow to cool completely.
  14. Add butter, powdered sugar, milk, lemon juice, and lemon zest in a bowl.
  15. Whisk to mix.
  16. Dip each donut in the glaze.
  17. Return to the cooling rack to allow the glaze to set.

Recipe Notes

  • If you want the glaze to be thick, reduce the milk to 1 tablespoon.
  • If you prefer a thinner glaze add 2 tablespoons of milk.
