Fruit and Nut Salad with Honey Dressing

This fresh fruit and nut salad is so refreshing and has the most delicious textures from the different fruits and of course the almond. It's also the easiest recipe to make for breakfast, a side salad, dessert, and even nice enough to serve for company. You can easily double, triple, and quadruple the recipe for larger crowds. For now, this recipe is for just you!

Ingredients

  • 1 medium banana, sliced
  • 1 small grapefruit, red or white
  • 1 small green apple, cut into cubes
  • 1/2 cup fresh blueberries, rinse and patted dry
  • 1/4 cup almonds, chopped or slivered, leave a few out for garnish
  • 1 tbsp honey, use one tablespoon for drizzling on top of finished fruit salad for a vegan fruit salad, use pure maple syrup
  • 2 tbsp drippy Peanut butter, if needed put in microwave for a few seconds to make more drippy

Instructions

  1. 1.In a medium mixing bowl, toss grapefruit pieces, apple pieces, and banana slices.

    2. In a small mixing bowl, mix together drippy peanut butter and honey. Add into fruit mixture. Mix gently.

    4.  Add blueberries and almonds. Very gently, mix in. 

    5.   Serve garnished with a few almonds and another drizzle of honey or maple syrup if desired.
