Frozen Watermelon Yogurt Bars

These frozen watermelon yogurt bars are rich and creamy and make the perfect treat on a hot summer day. Watermelon, yogurt, blueberries, and protein powder combine to create a frozen snack packed with wholesome ingredients that everyone will love.

Ingredients

  • 2 cups plain or vanilla Greek yogurt
  • 1/4 cup vanilla whey protein powder
  • 1/4 cup blueberries
  • 1 teaspoon  dragon fruit powder or, freeze dried strawberry powder
  • smallest pinch salt
  • 1 1/4 cups cubed watermelon from a small to medium whole watermelon
  • natural sweetener of your choice, I used honey taste test before freezing

Instructions

  1. Slice the watermelon and put the end pieces aside to eat later. Cut a 1 or 1 1/4-inch slice. Gently cut around the inside edge of the rind and take out the watermelon flesh. Slice the watermelon and place 1 1/4 cup of watermelon cubes into the blender. Add the yogurt to the watermelon cubes and blend until almost combined. Add the protein powder, dragon fruit powder, and a small pinch of salt and blend again until combined. Check the mixture for sweetness and add a natural sweetener like honey if desired. Place the watermelon rind on a plate and poke four holes into it. Insert ice cream sticks into each hole. Pour the yogurt mixture into the center space until even with the top of the rind. Gently add blueberries all over the yogurt to look like seeds. Place in the freezer for at least 4 hours but not overnight. Slice the frozen watermelon yogurt circle onto a cutting board and cut it into four large wedges. Enjoy!
