Frozen Watermelon Mojito

Beat the heat with a frozen watermelon mojito loaded with the flavors of watermelon, mint, lime, rum, and blended with ice for a frozen, slushie texture that’s perfect for barbecues, cookouts, or lounging by the pool.

Ingredients

  • 2 1/2 cups frozen watermelon cut into cubes or chunks
  • 1/2 cup white rum
  • 1/3 cup fresh squeezed lime juice
  • 1/2 cup granulated sugar or for sugar free, use your favorite brand that dissolves well Add more sugar after all is blended if you want it sweeter.
  • 1/2 cup cold water
  • 1/2 cup seltzer, plain or lime chilled
  • 2 mint sprigs
  • lime wedges, watermelon slices, and mint for garnish This is optional

Instructions

  1. NOTE: You’ll want to plan ahead so you can have time to freeze the watermelon. (About 2 hours) 

    1. Cut watermelon into small to medium chunks or cubes. Lay single layer on a rimmed cookie sheet. Place in freezer until frozen. This should take about 2 hours. 

    2.While the watermelon is freezing, make your simple syrup. Bring the sugar and water to a boil in a small saucepan over medium to high heat.  Add the mint sprigs, reduce the heat to low, and simmer for 5 minutes. Let the mixture come to a boil.  Remove the syrup from the heat, and let cool 30 minutes on the stove top. Remove and discard the mint sprigs.

    3. Chill syrup in fridge for about 30 minutes or until it’s cooled completely. 

    4. In a blender, combine the frozen watermelon, simple syrup, rum and lime juice. Blend until smooth. About 10 seconds should be right. Pour in the seltzer. Blend for just a second or two to combine. Divide the mixture evenly into glasses. (Chilled glasses are a great idea. Just place glasses in fridge a half hour before serving) Garnish each with a watermelon wedge, lime wedge and mint sprigs, this is optional. Enjoy!
