Cucumber and Dill Sandwiches

Ingredients

  • 8 slices white sandwich bread
  • 8 ounces cream cheese softened.
  • 2 tablespoons Mayonnaise
  • 1 1/2 teaspoons Lemon juice
  • 1 tablespoon Fresh chives chopped.
  • 1 tablespoon fresh dill chopped.
  • 1 teaspoon fresh Italian parsley chopped.
  • 2 English cucumbers sliced thinly
  • Salt and Pepper to taste

Instructions

  1. Combine softened cream cheese, mayonnaise, lemon juice, chives, dill, and parsley in a bowl and mix until smooth. Season with salt and pepper.
  2. Thinly slice the cucumber, optionally peeling it in stripes.
  3. Spread the cream cheese mixture on one side of each bread slice.
  4. Place cucumber slices on half of the bread slices, then top with the mixture. Stack as high as you want.
  5. Top the cucumber with the remaining bread slices, spread-side down.
  6. Optionally, trim the crusts.
  7. Cut the sandwiches diagonally into triangles or other shapes.

Recipe Notes

You can add 1/4 teaspoon garlic powder and one teaspoon lemon zest again.
