Copycat Lofthouse Christmas Cookies

Ingredients

  • ½ cup unsalted sweet cream butter softened
  • ¼ cup canola oil
  • ½ cup sugar
  • 2 tablespoons powdered sugar
  • 1 large egg
  • 1 tablespoons heavy whipping cream
  • 2 ⅓ cups flour
  • 2 tablespoons corn starch
  • ¼ teaspoon kosher salt
  • ¾ teaspoon baking powder

Vanilla Buttercream Frosting

  • 1 cup unsalted sweet cream butter softened
  • 2 cups powdered sugar
  • 4 tablespoons heavy whipping cream
  • 3 teaspoons Vanilla extract
  • Red gel food coloring
  • Green gel food coloring
  • Christmas sprinkles

Instructions

  1. Preheat oven to 350 degrees and line two cookie sheets with silicone baking mats Using a standing mixer, beat the butter, oil, sugar, powder sugar until combined Beat in the egg, and heavy whipping cream until combined
  2. Using a medium bowl, whisk together the flour, corn starch, salt and baking powder Gradually beat in the dry ingredients into the wet and continue beating until a dough forms
  3. Using a medium cookie scoop and food scale (optional) scoop out a small amount of dough and weigh it. You want your dough to be 2.2 oz or close to make 12 equal size cookies
  4. Roll the cookie dough into a ball and place onto the cookie sheet, pressing into a thick disk Repeat steps until you have 6 even sized cookie dough disk on your cookie trays Bake in the oven for 10 minutes
  5. Allow to cool completely while you make your frosting
  6. Using a standing mixer, beat the butter, powdered sugar, heavy whipping cream, Vanilla extract until creamy
  7. Divide the frosting into the two bowls
  8. Mix 6 drops of the red gel food coloring into 1 bowl
  9. Mix in 6 drops of the green gel food coloring into the second bowl
  10. Take the medium cookie scoop and scoop some frosting onto the top of the cookie
  11. Place the cookie upside down on the silicone baking mat and gently press down so that the frosting becomes a flat disk
  12. Repeat with the rest of the cookies and the red frosting
  13. Place the cookies into the freezer for 10 minute to allow the frosting to harden
  14. Once the frosting is hard, gently peel the cookie off from the silicone mat and sprinkle some christmas sprinkles on top
  15. Enjoy!
