Confetti Cookie Cake

Here's a fun to make confetti cookie cake that is so delicious and easy to make too.

Ingredients

  • 1 1/2 cups unsalted butter, softened
  • 1 1/2 cups light brown sugar, lightly packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 1/2 tbsp vanilla extract
  • 1 1/2 tsp baking soda
  • 1 tsp fine sea or kosher salt
  • 2 1/2 cups all purpose flour
  • 3/4 to 1 cup assorted sprinkles, for this cake I used Valentine colors

Luscious chocolate frosting

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, or confectioners sugar, whisk to break up any clumps
  • 1/2 cup unsweetened cocoa powder, whisk to break up any clumps
  • 3 tbsp heavy cream
  • 1 tbsp vanilla extract
  • 1/4 to 1/3 cup assorted sprinkles, I used Valentine colors for this cake

Instructions

  1. 1.Preheat oven to 350 degrees and spray a 9 in heart shape cake pan or 9 inch round pan with baking or cooking spray, set aside.

    2.Using a large bowl, whisk together the flour, baking soda, and salt.

    3.In another large bowl, beat the butter, sugar, and brown sugar until light and fluffy.

    4.Beat in the eggs and vanilla until combined.

    5.Gradually beat in the dry ingredients until combined and a dough forms

    6.Fold in 1 1⁄2 C chocolate chips and 3/4 C Valentine’s Day sprinkles

    7.Press the cookie dough into the cake pan.

    8.Sprinkle the remaining chocolate chips and sprinkles on top.

    9.Bake in the oven for 25-30 minutes or until the edges are set and start to turn a light golden.

    10.Remove from oven and allow to cool completely on a wire rack. Then, when just about cooled use a butter knife to go around the edges of the pan. Finish cooling until ready to frost.

    11.While cake is cooling, make the frosting. Using a stand or hand held mixer, beat the butter, powdered sugar, cocoa powder, heavy whipping cream, and vanilla until combined.

    12.Scoop the frosting into a piping bag or Ziplock bag and set aside.

    13.Remove the cookie cake from the pan and place onto the cake board.

    14.If using a Ziplock bag, cut a small slit off one side. Pipe dollops all around the edge of the cookie cake.

    15.Sprinkle some sprinkles on top

    Cut into slices and serve, enjoy!
