Classic Cobb Salad

This classic Cobb salad has everything we love about the iconic mix of greens and veggies. Crisp lettuce, tomatoes, onions, avocado, chicken, bacon, eggs, and more come together to create a salad that's loaded with flavors and textures. It's a great meal when you want a dish that's flavorful but still relatively light.

Ingredients

  • 3 cups Iceberg or Romaine lettuce
  • 1 to 2 white meat chicken breasts
  • 4 slices well cooked bacon
  • 2 hard boiled eggs
  • 1/2 cup sliced cherry or grape tomatoes
  • 1 cubed avocado
  • 2 ounces Blue cheese or Roquefort cheese
  • 2 scallions/green onions, green part only cut into small pieces
  • dressing of choice

Instructions

  1. 1. Place the eggs in a saucepan and cover them completely with water. Then, bring the water to a boil, cover the pot, and remove it from the heat. Let the eggs sit for 10 to 12 minutes. Cool, peel, and chop. 

    2. While the eggs cook, place the bacon in a large, deep skillet. Cook over medium-high heat until evenly browned and crispy - about 7 to 10 minutes. Drain, crumble, and set aside. 

    3. Using a sharp knife, cut the lettuce into shreds. 

    4. Place the shredded lettuce in the bottom of large bowls, then add rows of bacon, eggs, chicken, tomatoes, blue cheese, green onions, and avocado. Top with dressing of choice and enjoy!
