Chocolate Covered Blueberry Yogurt Clusters

These Chocolate Covered Blueberry Yogurt Clusters are a better-for-you sweet treat that everyone in the family will love. Fresh blueberries are mixed with Greek yogurt and then frozen. Then, they’re dipped in melted semi-sweet chocolate and frozen to create a rich, frozen treat.

Ingredients

  • 1 1/4 cups chocolate chips, I used semisweet
  • 1 tsp solid coconut oil, I used refined for no coconut taste
  • 1 1/8 cups Greek yogurt, plain, vanilla, or blueberry all work, I like Fage
  • 1/2 tsp pure vanilla extract
  • 2 cups fresh blueberries, rinsed and patted dry with paper towels Be gently not to break up any of the blueberries
  • 1-2 tbsp honey, maple syrup, or any sweetener of choice, or leave out
  • sprinkling coarse sea salt for topping, this is optional

Instructions

  1. Step 1: Make the Clusters

    Mix the yogurt, vanilla, and honey in a large mixing bowl. Then, gently stir in the blueberries to coat. Try to keep the blueberries from breaking up.

    Drop the mixture by the spoonful onto a rimmed baking sheet lined with parchment paper and freeze until hardened – about 20 minutes. You may need up to 30 minutes but, no longer.

    Step 2: Chill

    Step 3: Melt the Chocolate

    Add the chocolate chips and coconut oil to a microwaveable bowl and heat at 20-second intervals until melted, smooth and with a slight shine. Let the mixture cool for a minute or two minutes, stirring on and off.

    Step 4: Dip

    Remove the frozen blueberry clusters from the freezer and dip them into the chocolate. Place them back on the rimmed baking sheet and let set. This should only take a couple of minutes. No longer. THESE ARE BEST WHEN EATED RIGHT AWAY. If you need to store the clusters, put back in the freezer and when ready to eat at another time, let sit out on the counter for at least 5 to 10 minutes to soften up. Enjoy!
