Butterscotch and Chocolate Chip Cookies

These Butterscotch and Chocolate Chip Cookies are rich, chewy, and so delicious. Full of chocolate and butterscotch chips, they taste great!

Ingredients

  • 2 1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt, I use fine sea salt
  • 2 sticks unsalted butter, lightly softened unsalted
  • 1/2 cup granulated sugar
  • 1/2 cup light or dark brown sugar firmly packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips, I used semisweet
  • 1/2 cup butterscotch chips

Instructions

  1. In the mixing bowl of a stand mixer, place the butter, sugar, brown sugar, egg, and Vanilla, and mix until light and fluffy. In a separate bowl, combine the flour, baking soda, and salt, and whisk together until well mixed.
  2. Add the flour mixture to the mixing bowl a little at a time, until well mixed.
  3. Remove the mixing bowl from the mixer, and gently fold in the chocolate chips, and butterscotch chips, until well combined.
  4. Line a cookie sheet with parchment paper, and drop the cookie dough by Tablespoonful's onto the parchment paper. Bake at 350 for 11 - 15 minutes, or until the cookies are golden brown in color, and baked through.
  5. Remove to a wire rack to cool completely.
  6. Serve and enjoy!
