Banana Walnut Brownies

Ingredients

  • 2 large eggs
  • 3 large ripe bananas mashed
  • 1 1/2 cups granulated sugar
  • 1 cup sour cream
  • 1/2 cup unsalted butter softened
  • 2 teaspoons pure vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup chopped walnuts

Frosting:

  • 1/2 cup unsalted butter
  • 3 cups powdered sugar
  • 1 1/2 teaspoon pure vanilla extract
  • 3 tablespoons Whole milk
  • 1/4 cup chopped walnuts for topping

Instructions

  1. Preheat oven 350 and line a 9 x13 baking dish with parchment paper. (easy tip, crunch up the parchment paper before lining the dish) Set aside.

  2. In a large bowl, whisk together the flour, baking soda, and salt until combined.
  3. Using a standing mixer, beat together the butter, sugar, sour cream and eggs until smooth and creamy.
  4. Beat in the mashed bananas and vanilla extract until combined.
  5. Gradually mix in the dry ingredients until combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared pan.
  8. Bake in the oven for 25-30 minutes or until lightly golden brown.
  9. Remove from the oven, and allow to cool for about 15 minutes.
  10. Using a medium sauce pan, melt the butter over medium heat for 2-4 minutes. Watch the butter carefully, once it starts to turn a slight brown color and smell like roasted nuts, then its ready.
  11. Remove from heat and whisk in the powdered sugar, milk and vanilla.
  12. Add in 1-2 more tbsp milk to thin out the icing.
  13. Spread icing over the brownies and top with chopped walnuts.
  14. Allow icing to harden for an hour before cutting and enjoying!
