Banana Bread with Cinnamon Swirl

Ingredients

  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped finely or crushed walnuts – reserve 1 tablespoon for topping
  • 3 medium ripe bananas – mashed
  • 1/2 cup mayonnaise
  • 1 large egg
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder, make sure both are fresh
  • 1/2 teaspoon salt, I used fine sea salt
  • 3/4 cup granulated sugar

Cinnamon Swirl

  • 3 tablespoons unsalted butter – melted and cooled slightly
  • 3 tablespoons granulated sugar
  • 3 tablepsoons dark brown sugar
  • 2 to 2 1/2 teaspoons ground cinnamon
  • small pinch salt, I used fine sea salt
  • powdered sugar, this is optional for garnish

Instructions

  1. Preheat the oven to 350 degrees and lightly grease a 9x5 loaf pan. Set aside. 

    Combine the flour, baking soda, salt, nutmeg, cinnamon, and walnuts in a medium mixing bowl. Whisk to lighten the mixture up and reserve 1 teaspoon for topping the bread. 

    Mix the mashed bananas, mayonnaise, vanilla, sugar, and egg in a large bowl. Add the dry ingredients to the wet ingredients, gently folding them together until just combined. The batter will be very thick. 

    Combine the cinnamon swirl ingredients in a small bowl and set aside. Spread half the batter into the bottom of the loaf pan. Dollop half the cinnamon sugar mixture over the top of the batter and make a thick swirl with a table knife or the bottom of a wooden spoon. Add the remaining batter and cinnamon sugar mixture to the pan and swirl in the same manner.

     Add the reserved walnut to the top of the bread batter and sprinkle the reserved flour mixture over it. Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out clean. 

    Best when cooled to slice up. Enjoy!
