Apple Pie Breakfast Cookies

These apple pie breakfast cookies combine the tastes of a homemade apple pie with the great added texture of oats into a  perfect breakfast cookie that makes a deliciously sweet start to the day. These rich, sweet, and healthy cookies are perfect with a glass of milk or a cup of coffee to get your day off on the right foot!

Ingredients

  • 1 cup old fashioned oats, divided (If you don't have old fashioned, you can use quick cooking, the texture may be slightly different)
  • 1/2 tsp baking soda
  • 1 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp fine sea or kosher salt
  • 1/4 cup ground flax meal, I used golden and I ground it right before adding into the batter
  • 2 tbsp unsalted butter, melted and cooled, you can use coconut oil melted and cooled in it's place.
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 tsp real vanilla extract
  • 3/4 cup finely diced green (Granny Smith) apple
  • 1/2 cup chopped pecans, optional

Instructions

  1. Preheat oven to 375 degrees. Prepare a large baking sheet with parchment paper or a Silpat. Place 1/2 cup oats into a mini chopper or blender and pulse until the oats are ground into flour. In a large bowl, whisk together oats, oat flour, baking soda, cinnamon, salt, and flax meal. In a medium bowl, whisk together the butter, maple syrup, egg, and vanilla. Combine the wet ingredients with the dry ingredients. Stir in the apple and pecans if using. Using a medium cookie/ice cream scoop, divide the dough into 15 cookies. Lightly press the tops flat as these cookies remain in the same shape as they cook. Bake for about 10 minutes or until the middle is set. Allow to cool on the baking sheet for 5minutes. Then, slide the parchment paper onto a wire rack.  Enjoy!
