Kentucky Butter Cake Cookies

These Kentucky Butter Cake Cookies are soft and chewy, and perfect to make when you want a sweet treat that doesn't require a lot of effort to make!

Ingredients

  • 1 cup unsalted butter softened
  • cup Sugar
  • 4 tbsp Brown Sugar
  • 2 eggs room temperature
  • 2 tsp Vanilla extract
  • 3 cups Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt

Glaze Ingredients

  • 4 tbsp unsalted butter
  • ½ cup Powdered Sugar
  • 4 tsp Water
  • ½ tsp Vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350’ degrees
  2. Line a baking sheet with a baking mat or parchment paper
  3. Set to the side
  4. In a bowl of a stand mixer add the butter, and both sugars.
  5. Mix on medium speed until combined.
  6. Add the eggs and vanilla extract to the sugar mixture and mix until combined.
  7. In a medium sized bowl add the flour, baking powder, and salt.
  8. Whisk to combine.
  9. Add the flour mixture to the sugar mixture 1 cup at a time until combined.
  10. Using a cookie scoop , scoop out dough balls and roll in your hands to make it round.
  11. Place on the cookie sheet and lightly press down by using your hand or the back of a measuring cup.

  12. Bake the cookies in the oven for 10 minutes.
  13. Remove from the oven and set to the side.
  14. Add the glaze to the cookies by using a sauce brush.
  15. Make sure to cover evenly.
  16. Allow the glaze to harden then serve.

Glaze Instructions

  1. In a medium saucepan add the butter, sugar, water and vanilla.

  2. Cook over low to medium heat.
  3. Stir constantly
  4. Once the mixture is dissolved remove from the heat

Recipe Notes

  • If you don't have a stand mixer for these cookies, you can use a hand mixer instead.
  • Be sure that your ingredients are a room temperature before you start to make these cookies. Room temperature ingredients ensure that your cookie dough turns out smooth and creamy.
  • Make sure that you cream your butter and sugar well until are well mixed and light and fluffy.
  • Once you add the flour be careful to not overmix the dough. Mix until it is just combined.
  • If you want to ensure that all your cookies turn out perfectly sized every time weigh the cookie dough to 2 ounces of dough per ball.
  • To get perfectly round cookies once they come out of the oven all them to cool slightly and then shape them with a clean glass or mason jar. You will slightly and carefully twist the jar or glass to help shape the warm cookies.
