This mason jar strawberry cheesecake recipe is very easy to make and looks so pretty to serve and is delicious.
Preheat oven to 350 degrees. Spray the bottom of a 9×9 baking pan with cooking spray and set aside. In a large mixing bowl, prepare the cake mix as directed on box with the eggs, butter, water, and vanilla extract. Mix until evenly combined and there are no more lumps. I used a wire whisk. You can use a hand held mixer if you want. Pour the batter into the baking pan and bake as directed on package or until golden and a toothpick inserted in the center comes out clean. When cake is finished, remove from oven and let cool on a wire rack for at least 35 minutes or longer. If you want a cooler and firmer cake (easier to cut into squares), you can place in the fridge to chill. Wait until you have cooled on the wire rack for at least 35 minutes. Cut the cooled cake into small squares and set aside.
Rinse and slice the strawberries and set aside and have the graham cracker crumbs ready to go as well. It’s now time to assemble the mason jars. Start with the cake pieces on the bottom then strawberry slices over that and the cheesecake filling dolloped over the strawberries. Top with graham cracker crumbs. Top with more strawberry slices and some whipped cream. Remember only add the whipped cream when ready to serve. Enjoy!
