Ingredients

  • 1 box vanilla cake mix, gluten free or regular plus ingredients on the box. For the regular cake mix, I swapped out butter for the oil and added 1 teaspoon vanilla extract
  • 6 cups sliced fresh strawberries
  • 1 cup graham cracker crumbs, regular or gluten free
  • 24 ounces Philadelphia Cheesecake No-Bake Filling
  • 2 tbsp Reddi-wip or any brand whipped cream for topping, this can be optional. (If adding, add just before serving, this kind of canned whipped cream does not hold up after a while. You can always make homemade or even a non dairy whipped topping such as Cool Whip or TruWhip. Just make sure it’s thawed out first.

Instructions

  1. Preheat oven to 350 degrees. Spray the bottom of a 9×9 baking pan with cooking spray and set aside. In a large mixing bowl, prepare the cake mix as directed on box with the eggs, butter, water, and vanilla extract. Mix until evenly combined and there are no more lumps. I used a wire whisk. You can use a hand held mixer if you want. Pour the batter into the baking pan and bake as directed on package or until golden and a toothpick inserted in the center comes out clean. When cake is finished, remove from oven and let cool on a wire rack for at least 35 minutes or longer. If you want a cooler and firmer cake (easier to cut into squares), you can place in the fridge to chill. Wait until you have cooled on the wire rack for at least 35 minutes. Cut the cooled cake into small squares and set aside.

Rinse and slice the strawberries and set aside and have the graham cracker crumbs ready to go as well. It’s now time to assemble the mason jars. Start with the cake pieces on the bottom then strawberry slices over that and the cheesecake filling dolloped over the strawberries. Top with graham cracker crumbs. Top with more strawberry slices and some whipped cream. Remember only add the whipped cream when ready to serve. Enjoy!
