Orange Creamsicle Fluff Salad

This orange creamsicle fluff salad tastes just like one of the orange creamsicle pops you get from the ice cream man. But, without the wooden stick and sticky mess!

Ingredients

  • 3 ounce box orange Jell-O - for skinny version use sugar free
  • 3 ounce box vanilla pudding mix - for skinny version use sugar free
  • 1 cup boiling water
  • 1/2 cup ice cold water
  • 1 tub 8 ounces Cool Whip - for skinny version use fat free Cool Whip
  • 14 ounce can mandarin oranges, drained - for skinny version use oranges in their own juice
  • 1 cup mini marshmallow
  • mini marshmallows and mandarin oranges for garnish, optional
  • mint leaves for garnish, this is optional

Instructions

  1. In a large mixing bowl, combine the small box of orange Jell-O with the boiling water. Using a whisk, dissolve the Jell-O. Add in the cold water and whisk again. Let the mixture chill for 20 to 25 minutes in the fridge. When you take out of fridge, the mixture should have thickened just a little, don’t worry if it has not yet. Whisk again and then pour the box of dry vanilla pudding into the bowl. Whisk until the mixture starts to become a little thickened. Make sure everything is mixed well. Take a rubber spatula and dip down to make sure it’s all incorporated. Place back in the fridge and chill for another 25 minutes. Now the mixture should be thickened a little bit more. Fold in the container of Cool Whip until combined and smooth. There can be some streaks of white showing. Mix in the mini marshmallows and mandarin oranges. Cover the bowl with plastic wrap and chill for at least another 60 minutes. When you take out of the fridge, let sit at room temperature for about 10 to 15 minutes. Put the fluff salad in a serving bowl or dish out into 8 dessert dishes or small ramekins. Garnish with a few more oranges and marshmallow. That’s it. Easy-Peasy and oh so luscious. Enjoy!
