Simple Lemon Cobbler

Ingredients

  • 1/2 cup unsalted butter, melted and cooled slightly
  • 1 cup granulated sugar
  • 1 tbsp granulated sugar
  • 1 cup self rising flour
  • 1 cup buttermilk
  • 1 to 2 tbsp lemon zest
  • 1 1/4 tsp vanilla extract
  • 1 22 ounce can lemon pie filling

Instructions

  1. Preheat oven to 350 degrees.

    In a small mixing bowl, melt the butter in the microwave. 

    Pour the butter into a 9 x 9 baking dish. (I like to use a glass dish so everyone can see how beautiful this dessert is) Make sure to spread the butter evenly using a pastry brush or a rubber spatula. Go up the sides of the baking dish too. Set aside for just a few minutes.

    In a large mixing bowl add the self rising flour and granulated sugar. Use a whisk to break up any clumps. Add the buttermilk, vanilla, and lemon zest. Whisk or mix with a spatula until combined. 

    Pour the buttermilk batter evenly into the buttered baking dish. Lightly spread the batter over the whole baking dish.

    Spoon the lemon mixture over the buttermilk batter. Do not stir. This is important for the right texture

     Once you pour the lemon mixture over the batter, just leave as is.

    Bake for about 50 to 60 minutes. The top should be lightly browned and the middle may still have a bit of a wobble to it.  Let cool down just a bit.  Delicious slightly warm with whipped cream or vanilla ice cream. Also just as delicious served cold topped with a dusting of powdered sugar. Store in fridge up to 3 days.  Enjoy!
