Ingredients

  • 1  box white or yellow cake mix, plus ingredients on the box
  • 2 tubs  tubs white frosting, I like the the kind that says “whipped” 
  • 18 large marshmallows
  • 18 small or large jellybeans
  • red or pink sanding sugar
  • shredded coconut, optional

Optional supplies

  • paper or foil cupcake liners
  • piping bag or Ziploc with or without star tip ( If you decide to frost these yummy cupcakes, you’ll see in directions, they are easily frosted with a butter knife or a small offset spatula this is the one I use often)

Instructions

  1. Bake cupcakes according to package directions. Let cool completely before frosting and decorating. When cupcakes are completely cooled, you can use the piping bag, place the star tip at the bottom of the bag and pierce to open up and push the tip through. Then squeeze the frosting all the way down towards the tip. Or if using a Ziploc bag, fill bag with one tub of frosting at a time, squeezing all the way down to one tip of the bag. Make a small cut at the tip and frost. To frost the regular way, you many want to use the shredded coconut on top to look like bunny fur or leave plain. The bunny ears and jelly beans will surely look like a bunny! Cut marshmallows diagonally to create bunny ears. I used kitchen shears that I bought at the dollar store or these I got online. Dip the ears in the sanding sugar. The cut side should be sticky enough, if not, lightly coat with a little cold water then dip into the sugar. Once you have your cupcakes frosted, this is the time you may want to sprinkle a little shredded coconut if using. Then place two sugar coated ears on each cupcake. Place a jellybean where the nose should be. Hope you have lots of fun making these Easy Easter Bunny Cupcakes like my son and I did.
